I may be a few days late, but that's OK. I love st. patty's day! I love corned beef, maybe I love it so much because we only have it one time a year, or maybe its because I get to eat green mashed potatoes with it! Every year we make some corned beef and cabbage, green mashed potatoes and Irish soda bread. I'll share some easy, yummy recipes with you!
This is super easy, and super yummy. I took a head of cabbage and cut it up, threw it in the bottom of the crock pot, quarter 1 yellow onion and throw it in. Top it with your corned beef. I had a 4 lb roast, so I used 1/2 c. apple cider vinegar, 1 1/2 c. water, 2 T. sugar and the seasoning packet. Stuck it on low for a good 8-10 hours. Came out delish and fork tender!
This is a sweet version of Irish soda bread.
Sweet Raisin Irish Soda Bread:
2 c. all purpose flour
1 t. baking powder
1/2 t. baking soda
2 T. brown sugar
3 T. butter, or margarine
1 beaten egg
3/4 c. buttermilk
1 beaten egg
1/3 c. raisins
Mix flour, baking powder, baking soda, and brown sugar. Cut in your butter, until it looks like coarse crumbs. Mix your egg in your buttermilk and add to flour mixture, along with raisins. Mix up, a dough will form. Lightly flour your hands and counter and knead the bread 12 times. Shape it into a 6" round loaf and cut an X on the top. Brush with 2nd beaten egg. Bake at 375 degree oven for 30-35 minutes, or until golden. Serve with some whipped butter.

This is the first year the leprechauns visited our house, they left all of Zoe's stuff a mess! But they left her a pot of gold!

lol I dont think a lot of people are a fan of corned beef and cabbage, i'm not a fan of cabbage but with the sugar and apple cider vineger in there it doesnt taste bad at all! Megan, I just used the little seasoning packet that came in the package with the corned beef!
