Lately.......


I figured since I haven't posted in awhile that I would do some latelys....

reading: What haven't I read lately?  Seems like I have read a ton the past couple of months!  A friend found this awesome author, her name is Kristen Ashley. She has ten million books (literally) and I have read about all of them. They are fun reads, long, but detailed and full of hot men, gaggle of girls, drama and kidnappings.  Weird, I know, but they are so much fun to read!  I'm not the biggest fan of bikers, but one book got me hooked on them! hahaha.  Check her out, her ebooks are cheap and its a really fun read!  I suggest  "motorcycle man", "games of  the heart", "the gamble" and "breathe" of course those are all in series, so you should read the series too!

obsessing: trying to find a house to live in.  I am sick of apartments.  We need room, Zoe needs a yard to play in.  I'm sick of cramming all our things in this tiny apartment. we have outgrown it.  but its so hard finding a house to rent in our budget. 

listening to: still loving Of Monsters and Men

baking/making: I bought an apple peeler/slicer/corer this summer, so I plan on a lot of apple desserts this winter :) 

looking forward to: Christmas festivities. this year we start the tradition of elf on the shelf.
want to accomplish: getting rid of a lot of our stuff we haven't used in awhile.  I decided since I haven't scrapbooked in a long time, and just cart the stuff around that I am going to get rid of it all.  sad, i know.
  
watching: vampire diaries! revolution is good, the mindy project=hilarious, new girl, once upon a time and revenge are on my must watch list.  Also watched breaking amish, disappointing in that one.  those kids were ridiculous.  

missing: being young and having no worries!

I'm Back!

I have been MIA for a bit, took the summer off to relax, get some organizing done, and do some more relaxing.  I'm working on a post of things that I actually completed this summer.  Some are still work in progress.  I have still been pinning like crazy and I came across some yummy prosciutto the other day and I couldn't pass it up, so I purchased some and decided to make some pasta carbonara.  My all time favorite pasta.  My favorite Italian restaurant Enzo's makes it perfect, but they are expensive, so my version will have to suffice.  Let me tell ya, my version came out perttty good!  


Here is the original recipe.

Here is my adaptation:

Pasta Carbonara:

4 eggs; room temp
1/2 c. shredded romano
1/2 c. parm cheese
3 oz. prosciutto; diced (can use pancetta)
3 garlic cloves; minced
1lb. spaghetti
1 c. frozen peas
fresh cracked black pepper

First off boil your water (don't forget the salt), cut up your prosciutto (original recipe calls for pancetta, but I had prosciutto) and saute over med-hi heat.  Now mine didn't render a lot of fat, so if yours does then scoop it out when crisp and reserve some of the rendering.  While crisping the prosciutto, I added the minced garlic.  I had the prosciutto in the pan for about 6 minutes or so.  When the water is boiling add your pasta and cook until al dente.  Towards the end, add the peas. 

While the pasta and prosciutto are cooking crack your eggs and add the cheese, I added a touch of half and half to mine, whisk together.  Reserve a cup of pasta water and temper the eggs with half a cup of pasta water, this will cook it.  (tempering, just add a little at a time and whisk quickly, so the eggs don't curdle)

Add cooked pasta to pan of prosciutto and toss with 1/4 c. pasta water.  Then add egg mixture and cracked black pepper, then toss to coat. Top with a little bit of cheese and enjoy!

My 1st couponing experience!

At the beginning of the summer I had a class in my home about couponing.  How to do it, where to go, how to stack.  All that good stuff.  So we all purchased four papers, which means Wednesday-Sunday we get four papers a day.......that's a lot of papers.  20 a week!  But I made my coupon binder and labeled everything with dates, and we are just starting to get out and do it.  I consulted with couponersunited and went for it.  I was so excited today!  I went to CVS.  We had $8 in care bucks, which means I could use that as payment!  Whoohoo!

So I packed my coupons, had them in order, went to the store in the storm and stocked up.  Cept I thought my care bucks were on the card....no turns out you have to have a receipt with the care bucks amount on there.  Which you can get at the machine in the front of the store when you walk in.  So I got my 16 items and went up to pay.  Thinking I was only going to pay $6.  But I did not, but I can still use them next time, for maybe even a better purchase!

So here is the break down.

2 xtra detergents...$1.49 each (no coupon, just cvs card)
4 Palmolive soap....$.99 each (4/.25 off coupons used)
Hellman's mayo.....2/$6 (2/$1 off coupons used)
4 mitchum deodorants.....$1.99 each (4/$1 off  coupons used)
4 Bayer 20 ct. aspirin.....$3 each (4/$3 off coupons used)

Grand total $14.80
Amount saved $47.46
All Bayer aspirin FREE!!! 

So for my first trip that included a screw up I think I did pretty good!

Not your average cupcake

Hello!  So I just got back from vacation and feeling a little guilty that I left my daughter at home with my mom.  I know every parent needs time to themselves, but I really missed her.  So I am trying to make up for it. 

First, I made cupcake pancakes.

Sorry for the picture quality. 

These are super simple.  Just make pancakes how you usually make them (I just use pancake mix), but you add your syrup in there.  1/4c. of maple syrup in your pancake mix.  Pour into sprayed cupcake liners and bake at 350 degrees for 20-25 minutes.  Easy peasy!  My daughter really enjoyed them and ate them up!

Next I made meatloaf cupcakes....
quick and easy!

for the meatloaf all I use is 1 lb ground turkey, 1/2 cup water, 1/4 BBQ sauce, 1 box stuffing ( I use cornbread stuffing) and one egg.  mix together form little balls and plop in a muffin tin! (don't forget to spray!) Bake at 350 degrees for 20-25 minutes. (if using turkey, make sure temp is 165 degrees)
I made homemade mashed potatoes, stuck it in zip lock back, snipped off the corner and pipped it on.  They came out super cute and super yummy!  Good for portion control as well.

yeah these werent a big hit with the kiddo.  She wasnt buying the whole cupcake thing! haha.  She'd rather regular frosting, not mashed potato frosting!

I figured since I haven't posted in awhile that I would do some latelys....

reading: Well a friend lent me a book on nook that I am gonna start reading tonight!  Cant wait!

obsessing: trying to organize our lives....trying new fun recipes.  I'm on the hunt for new stuff all the time!
listening to: I just downloaded a bunch of old songs on to my ipod.  Ive been having a lot of nostalgic feelings lately!  like early mid 90's.  I miss the music of those days!

baking/making: Lets see.  Blueberries were cheap the week before I left for vacay so we froze a bunch of them.  Made yummy lemon blueberry donuts. On the agenda is blueberry muffins, I am into cupcakes...but that I'll save for another post :)
looking forward to: spending lazy summer days with my baby!
want to accomplish: OPERATION ORGANIZATION!  I have only put a little chip in the iceberg of that one!!!
watching: well its summer time, so that means True Blood is back on!  I went a little crazy there for a hot minute and bought season 1 and 2, then read the 1st two books of the series again......just because the latest book sucked so bad!  I'm also watching pretty little liars and drop dead diva!!

missing: having no bills. I don't mind the normal ones, but these medical bills are killing me!!  I want my co-pay back!!!

New Recipes

Its been awhile, since I last posted and I just noticed that my last post was my 100th!  How exciting.  Well, its exciting to me, haha. 

The past few weeks I have been hanging at home trying to start operation organization.  Its not as easy as it looks.  I'm weeding out a lot of junk, but with my three year old at my heels, things just seem to get messier.  But that's OK, there is nothing I can do about that! 

I did just recently host a couponing class.  There is this awesome group around the Orlando area called couponers united (fb link) that give you links to printable coupons, as well as deals in local grocery stores/drug stores so you can save money.  Also they are big on giving back to the community.  Which I think is awesome.  We all need to save money now a days and you can give away the items you spent so little on and really help a person in need and save money while doing it.  I never understand some of those extreme couponers who seem to hoard all the things they buy.  Maybe they give it away, but it dosen't look like it to me.  But that's just my view on it. 

Any who, I am way off topic now.  So whenever I have a get together at my place I have to make some yummy food.  Where do I go to find this yummy food??  Pinterest of course!  I made some goodies, that will definitely be made again!

These were yummy and tasted like pizza.  Many variations you could do with it.  I did not add the onion and parm.  I used black olives, five cheese Italian cheese blend, pepperoni and green pepper.  I wonder how pineapple and ham would taste for a Hawaiian pizza mushroom!

I think the cake came out yummy!  I used betty crockers bottled glaze for the top, b/c when I make my own it comes out too translucent.  Try it for the summer, who doesn't love strawberries!?

Yummy Pot Roast

This is my absolute favorite pot roast recipe.  I have been using it for years, so I don't remember the source.  Some magazine.  I use the crock pot, so all I had to do was make my sides and dinner was done! 

Allie's Favorite Pot Roast

bottom roast (I used a roast a little over 2 lbs.)
2 cans of cream of whatever soup (I used celery and mushroom)
packet of Lipton's onion soup
carrots
potatoes
onions
salt and pepper

Throw the soup and Lipton's soup mix in the crock pot and mix.  Add potatoes, onions, carrots (chop however you like).  Now I also salt my roast on both sides and then throw it it.  I turn it around so it gets covered in the "gravy".  Put on low for 6-8 hours.  After its done its so tender you can just shred it and then your gravy is already done. 



For dinner I made buttered noodles for it.  Or you could make mashed potatoes, whatever you like!

Now for my side, this I found on pinterest and it smelled delicious!  It tasted delicious!  This one is def. a keeper!

Cheesy Zucchini and Squash

2 zucchini
2 yellow squash
2 T. fresh basil, chopped.
1 t. fresh thyme
2 green onion stalks, chopped
salt and pepper
garlic powder
1/2 c. white cheese + 1/2 c. white cheese (for topping)
1/2 c. parm cheese

Mix all together, except 1/2 c. cheese for topping.  Bake at 350 degrees for 25-30 minutes.  After the 25-30 minutes add the rest of the cheese and pop back in the oven for another 10 minutes, or until browned. 

So quick and easy and yummy!

Creamy Bacon and Potato Soup

I know weather is crazy lately.  We actually woke up to 46 degree weather, here in Florida.  I got a little excited and planned the menu, while it was 46 degrees and found a yummy soup recipe.  I should have known better, because by the time I made it, it was not cool anymore.  There was a nice breeze, but that was about it!  The soup was still yummy.  I had everything I needed for it except bacon.  I love bacon, every once in awhile, but bacon is freaking expensive!  So we never get it.  But I splurged, ha ha.  I found the recipe over at tidy mom.

I just made a few adjustments.


Bacon and Potato Soup
5 medium potatoes, cubed.  ( I baked mine in the oven before hand)
8 slices bacon, crumbled. (I made mine in the oven for 25 minutes)
2-3 or 4 depending on what you like of bacon grease ( I mixed it with oil)
1 onion. chopped.
1 celery stalk, chopped.
1 clove garlic, minced.
2/3 c. flour
6 c. chicken broth.
2 c. half and half.
1 t. salt
1 1/2 t. dried basil (this is a must)
1/4 t. black pepper
1/4 c. parsley (I did not use)
1/2 t. hot sauce

garnishes:  I used cheddar cheese/Colby mix, chopped green onions and left over bacon. 

Take your bacon grease and put it in a big sauce pot.  I used a mix of bacon grease and oil.  add onion.  Now I don't like crunchy celery so I added mine with the onion.  After the onion is translucent add your garlic and cook for a minute.  Add flour.  Now at this point, I added a little more bacon grease.  Cook that for a couple of minutes.  This is your roux, you don't want a flour taste.  Add your chicken broth and let it thicken, or get slightly bubbly.
Add half and half and rest of ingredients.  Bring to a simmer for 10 minutes. 

I cut my potatoes really big, so I mashed it a little bit in the soup. 

I thought the soup was yummy!  The dried basil really gave it that good taste!  Enjoy! 

Since I'm in the soup mode, I will be making a cream of mushroom soup today!

Projects for May

While I should be studying for my algebra final, or writing my last paper for humanities, I am on here thinking and documenting my projects for May!  School is done next week, and while I should be solving algebraic equations, I am dreaming of starting OPERATION ORGANIZATION!  Yeah, that's right.  I am super excited for it.  I don't see it as a chore, I see it as a light at the end of the tunnel!  So I wanted to come on here and make a list of the projects I have lined up.  First thing come May, you better believe I will be getting these things done! 


What I like about this, is you can change it up every week.  When you have completed a goal you take it off and feel accomplished.  If you haven't completed a goal then you feel like  slacker and get it done!
Why label it a task?  Label it a goal, it has a nicer ring to it, don't ya think?  


This I have been wanting to do for a long time, she has an awesome organized binder on her site.  I'm going to change mine up tho.  You know that junk drawer in your kitchen?  Manuals, to go menus, coupons.....you know what I'm sayin!  They get lost in that big mess.  So I want to organize mine.  So instead of taking everything out of that junk drawer, you have it all in one spot.  New bills that just come in the mail will also have a place in there.  Receipts that need to be shredded will find a home in this binder, as well as upcoming appointments!  I am super excited about this one!

I want to get into shape, not only to lose weight, but to keep it off and really incorporate exercise into my life.  My daughter and I joined the YMCA and so far we love it! I set up 6 months of life coach sessions, so I will come up with a workout plan and get started!  Cant wait to shed some of this weight!

Latelys.....

I figured since I haven't posted in awhile that I would do some latelys....

reading: So last lately I said I just bought the 2nd book of the unearthly series.  I just started reading like a week ago.  I started reading it because I am so over my algebra class that I sit in the back and read on my nook.  Well it got really good last night and I finished it a little after midnight!  Cried thru about half of it.  First book of a series that I have read that doesn't leave you with a horrible cliff hanger.  It left me with a peaceful mind.  and I dreamt of angel-bloods all night, haha.  I highly recommend the series, Unearthly by Cynthia Hand and then Hallowed



obsessing: I am not going to summer school again this summer, so I have labeled this summer OPERATION ORGANIZATION!  Yep, I am on an organization binge, I am decluttering our lives, I am reorganizing it and making our lives easier.  Well I am hoping too, at least.  I also want to do fun things with the family. 


listening to: bon iver.  I just got tickets to his concert here in Orlando, so I want to purchase his cd's so I can know all his songs and sing along, at the top of my lungs.  ok, well not the top of my lungs.  something tells me it wont be a loud show. lol



baking/making: I made a delicious pizza casserole late week, as well as a yummy chicken stew made in the crock pot.  The chicken stew is a weight watchers recipe and it was yummy, full of veggies and finished it with some greek yogurt.  a nice tangy taste.  I also doctored up some hashbrown casserole, I was eating that thing for two days, it was so yummy, even cold!  for Easter I made a jello/pretzel dessert.  It was yummy, but we were all so full no one really ate it.  so it was wasted, I will def. make it again, but cut it in half next time.


looking forward to: summer, our vacation, hopefully meeting Marianne finally!  lol.  Joining the ymca for Zoe and I, and getting organized!

WITL day 5

Here is day 5!!

We started our day out by going out to breakfast at perkins.  Zoe didn't eat a thing, Richie and I however stuffed ourselves silly!
Then we headed to the verizon store.  Bought my mom her very own cell phone!

I had zoe in the cutest spring dress, but she refused to wear shoes.  I was tired and hungry, so I agreed to let her wear her elmo slippers.  Sometimes ya just gotta pick your battles! lol

10:30-1pm I was at work.  Then headed to boutique for a week.  It last for three days and its a big consignment shop.  They go to local churches and on the last day you can get stuff half off.  There are kids clothes, maternity clothes, toys, baby stuff, etc.  I am thinking of becoming a consigner for the next one. I have so many old clothes from zoe I should go thru and get rid of. Why not make money of it??

We gave my mom her cell and then we ate dinner at like 4 pm, lol.  I had to leave for the movies at 5:15.

Day 6:  I worked all day long.  Then came home and sat on the couch lol.  I was so freaking tired, work exhausted me!

WITL day 4

I'm late! 

Day 4:

10am- Poor Zoe has been stuck inside for weeks, since I wasnt feeling good, and then she wasnt feeling good.  She had been asking to go to the zoo forever.  So I figure ok, lets go to the zoo.  Cept I forgot it is spring break!  The place was packed!  I like going when noone is there.  I figured we could eat lunch there and relax.  Yeah, no.  The food area was packed, the line was out the door to even order food.  We stayed less then 2 hours.  I made Zoe walk the entire time, so she was kinda pooped.

This is when you first walk in, we made a wax mold of a "tiger" really its a cougar, but not according to zoe, lol.
They have a little petting zoo, zoe loves roosters and cock-a-doodle-doos all the time.  So as we were walking inside to buy feed the rooster cock-a-doodled-dooed at us.

So since we couldnt eat lunch at the zoo, I figured lets go to Sanford.  You all have heard of Sanford right?  Its national news, the 17 year old boy who was killed for no reason....yep, that was in my favorite town.  I love sanford, I love the people, I love the area, so pretty there. 
This is the drive to downtown Sanford, its the St. Johns River.  A lot of people park out there and go fishin.
We had lunch at this little corner cafe.  Cafe Rouge.  I have been wanting to try it forever. Zoe had mcdonalds because she doesnt eat anything else!
I got the croque monsuir (I dont think thats how you spell it.)  It was ok, not a true croque.  Its supposed to have mustard on it.  but the bread was yummy!

We decided to walk up and hit some shops and get ice cream, make some wishes and peruse books!

This was birthday cake, vanilla ice cream with chocolate cake, chocolate frosting and sprinkles mixed in.  Yum!

After we came home, I headed off to the work then came home and watched my shows!

WITL day 3

Day 3:

I took no pictures!! WTH!?  I know!  Wednesday are horrible days, its the first day back to work.  My attitude is always blah...blah...blah....

6:30-starts our morning.  You would think since it was dark out, the kid would sleep, but she did not. 

9:30- work starts.  Short shift, but it wears me out lol. 

2pm- I'm done with work for the day so I head home.  I made periogies for lunch.  Zoe and I are going to turn into periogies, we eat them so much!

This is how the rest of my day and night have and will go.  Sitting around watching tv, doing dishes, cleaning up toys....doing artwork.  Making dinner.....watching one tree hill and pinning.

WITL day 2

Lets see, our day started out at 7:30, Marianne texted me to let me know that the 15 second trailer for BD 2 was up, so I had to get up and watch it real quick lol.  Have you ladies seen it??  Such a tease, 15 seconds!  ugh. 
 
9am- off to the doctors office we go.  I'm so sick of doctors.. anyways, my chest x-rays show that the pneumonia has cleared!  Yay, but now I have a sore throat from Zoe, I think we will just keep passing each other our colds.  I was told I cant exercise for another week.  Bummer.  I just joined weight watchers.  Like the day I started feeling sick from the pneumonia (of course I didn't think I had it then, otherwise I would have waited.  Cuz I'm wasting $43 this month)
10am-went to visit my mom to tell her how the doc went.  I also got meds for my dizziness.  She said I have a lot of fluids in my ears, so that is what is making me so dizzy.  I had to leave work 3 times last week because I was so dizzy I couldn't walk straight.  And with my job there is no time to sit and rest.  So Zoe played a computer game with grandma for a bit.  Then we went to winter park to drop of pampered chef stuff for a friend. 
Then we stopped at the bread store.  Got all this loot for $9.  Cant beat that!  I love those bagel thins, sometimes a full bagel is just too much.  This way a thin one is just enough bread and low in calories.  I stopped the get lunch, not diet food!  Went home to relax.
I splurged and got a cooking light magazine!  Do you guys have publix up by you?  If not you are missing out!  They have the best subs!  She really loaded mine up with black olives. there was like two cans on there lol.  Subway has nothing on these publix subs!
1:30-nap time!  Zoe isn't feeling well, so its a fight for everything!
6pm-off to school I go!  Tuesday nights are my favorite class.  18th and 19th century humanities.  We watched Goya's Ghosts, not a biography, but more of a artistic approach to why Goya painted what he did.  Goya was the painter to Spain's king in the late 1700's.  He then started painting what he wanted, which was unheard of in that time.  He did some gross images of the war during that time (french revolution)  It was a good movie.  Now I have to write a research paper on it, that and his Black paintings series.  Wanna help Marianne?? lol. 
9pm- Home from school and dealing with work drama.  Always fun.

St. Patty's Day

I may be a few days late, but that's OK.  I love st. patty's day!  I love corned beef, maybe I love it so much because we only have it one time a year, or maybe its because I get to eat green mashed potatoes with it!  Every year we make some corned beef and cabbage, green mashed potatoes and Irish soda bread.  I'll share some easy, yummy recipes with you!

This is super easy, and super yummy.  I took a head of cabbage and cut it up, threw it in the bottom of the crock pot, quarter 1 yellow onion and throw it in.  Top it with your corned beef.  I had a 4 lb roast, so I used 1/2 c. apple cider vinegar, 1 1/2 c. water, 2 T. sugar and the seasoning packet.  Stuck it on low for a good 8-10 hours.  Came out delish and fork tender!

This is a sweet version of Irish soda bread.

Sweet Raisin Irish Soda Bread:

2 c. all purpose flour
1 t. baking powder
1/2 t. baking soda
2 T. brown sugar
3 T. butter, or margarine
1 beaten egg
3/4 c. buttermilk
1 beaten egg
1/3 c. raisins

Mix flour, baking powder, baking soda, and brown sugar.  Cut in your butter, until it looks like coarse crumbs.  Mix your egg in your buttermilk and add to flour mixture, along with raisins.  Mix up, a dough will form.  Lightly flour your hands and counter and knead the bread 12 times.  Shape it into a 6" round loaf and cut an X on the top.  Brush with 2nd beaten egg.  Bake at 375 degree oven for 30-35 minutes, or until golden.  Serve with some whipped butter.

This is the first year the leprechauns visited our house, they left all of Zoe's stuff a mess!  But they left her a pot of gold!

Week in the Life....day 1


Last summer, my twi mom friends and I did a fun week in the life project.  Where we document our week in pictures and play out our days on our blogs.  It was super fun the first time around and we are doing it again!  Its a great way to see whats going on in our lives and catch up.  Everyone gets so busy and even tho we may have never met each other, I still consider these ladies good, good friends of mine! 

So here is my day one:

7:30- While zoe watches her cartoons, I drink my coffee and check emails and fb.  Well couponsunited had a coupon for $2 shirts (you design) so I found one that was worlds greatest dad and made one for Richie, from zoe.  Then I thought oooo, Ill make a peeta one, yeah stipulation.  Only 1 shirt for $2.  Poo.  So i decided on the shirt for Richie. 
Then I pin, because my day is not complete unless I pin.  Its my zen.  Or I am just totally obsessed :)

9:30- Off to the hospital we go, my mom came with us this time.  I had to go back for my 2nd set of chest x-rays.  Hopefully my pneumonia is gone.  I'm so over being sick.
The parking sucks at this hospital...just sayin.
11:00- lunch.  Zoe is on a chinese kick.  We go like twice a week. Its horrible and I am going broke.  But sometimes I am just too tired to cook, but my mom and I are getting sick of chinese food lol. 

This one is our fav b/c they do kids chop sticks, they have fishies we can say hi and bye to and they have unlimited sushi and hibatchi.  yumm-o!
1ish-  headed home, this pneumonia kicks my ass, so after this morning I was exhausted so we headed back to our place and my mom and I fell right asleep with zoe in between us and watched scooby-doo.
3:30- my mom headed home and Zoe and I played outside.  It was a pretty day out, not too much humidity.
I decided to replant my pretty plant I got for $.99, the guys that do the lawn, blows our front porches and ruined it.  So I am hoping it I can resurrect it! (ooo and I planted it in a collender!  I saw a pin for it! lol)
While I was doing this a freaking frog jumped on my foot!   A FROG!  I hate frogs, and there is this one that is always on my darn porch!  I hate it, I scream and jump around like a crazy lady for a few minutes and the stupid frog just sits there and watches me and doesnt leave!

4:00-quiet time!
Zoe stole my new moon blanket and wont give it back.  Richie taught her to call Edward "pale face"  I dont think its funny.  Ok I do, but Zoe gets a kick out of it when I get mad and tell her "no! its edward cullen!!" lol. 
5:30- off to school until 8:45.  I thought I was going to die in class tonight.  This teacher is just so confusing!
9:00- home and starving.  Made some quick corned beef hash and sat down to watch DWTS and Pretty little liars!
